Taco Salads


This is a recipe that you can completely vary according to what ingredients you have on hand or what leftovers are in your fridge. Here is a formula for making delicious Taco Salads….the combinations are endless!

Base Options:

Red leaf lettuce

Mixed Salad greens

Arugula

Spinach

Lettuce of your choice (iceberg has the least nutritional value)

Protein Options:

Ground turkey or beef

Shredded beef, pork, or chicken

Cubed chicken breast or steak

Black or Red Beans

Refried Beans

Scrambled or Fried Eggs

Quinoa


Toppings: select as many as you like!

Siete chips

Crushed almond crackers

Diced avocado

Chopped grape or cherry tomato

Fresh chopped cilantro or parsley

Freshly squeezed lime

Shredded cheese

Salsa or pico de gallo

Sour cream or Plain Yogurt

Shredded or pickled cabbage

Bean sprouts

Black olives

Brown Rice

Quinoa

Hummus
