Ingredients:
BISCUITS:
2 large eggs
2 Tbsp full-fat cottage cheese or sour cream
2 Tbsp grass-fed butter, melted
1 cup Almond Flour
½ tsp baking powder
¼ tsp Himalayan sea salt
1 cup sharp cheddar cheese, shredded
BUTTER GLAZE:
2 Tbsp grass-fed butter, melted
½ tsp garlic powder
½ tsp dried parsley
⅛ tsp Himalayan sea salt
Instructions:
Preheat oven to 400° and line a baking sheet with parchment paper. In a medium bowl, whisk together eggs, cottage cheese, and melted butter. In a separate bowl, combine almond flour, baking powder, and salt. Slowly fold dry ingredients into wet ingredients and stir to combine thoroughly. Fold in the cheddar cheese. Drop batter onto the prepared baking sheet, about the size of 3 tablespoons each. This recipe should make 6-8 biscuits. Bake for 12-14 minutes or until the biscuits are light golden brown. Remove the biscuits from the baking sheet on place them on a cooling rack.
For the butter glaze, stir all ingredients together and brush over the biscuits while they are still hot. Enjoy immediately!
